clean with warm soapy water, allow to air dry completely before applying oil. use food-grade mineral oil (avoiding cooking oils as can go rancid). let oil soak into the wood for 20 minutes (or overnight for deeper penetration). wipe off any remaining oil and buff surface until dry and smooth. for extra protection you can optionally apply a food-safe wood wax (beeswax or mineral oil blend).
